Food Turns To "Art"

As an "Artist" and NOT a "Foodie"...I NEVER understood the fascination of taking pictures of Food! Yeah, well once again...I have been shown that one should NEVER Say NEVER!!!

Since taking on this Healthy "Lifestyle", I have also started Instagraming pictures of the food I make on the @CowboysandButterflies IG account.

Well last night, after cutting up a beet, I realized...Fresh and Healthy "food" creates an incredible Color Palette!

What did I make...a Beet and Kale Salad! Wanna know how and with what? Then check it out!

Beets, Kale, Ginger, Celery, Red Onion, Lemon, Strawberries, left over Quinoa and touch of Olive Oil, Salt and Balsamic Vinegrette...thats all ya need! (there is garlic in the picture but I actually forgot to use it (oops...it still tasted fantastic!)

The beauty of all of this is...you can use as much or as little as you want of each ingredient...start by cutting up the Veggies

Saute the beats in Olive oil with onion...

Add in the Celery, Ginger and Lemon wedge...

Throw in the Kale...

Cover until the Kale is slightly wilted and soft...

Warm up the left over Quinoa (there is always some Quinoa in the fridge around here-Why? cause its a GREAT source of Protien!)...

And VIOLA!!!!! Dinner is DONE!

Now go eat your Healthy Heart Out and ENJOY!!!!!
